Fluffy and spongy Pancakes!
Good evening fellas! This time, let's try some upgraded version of pancakes by taking inspiration from Japanese cuisine. Get ready to try these fluffy babies!
All you need is:
- 3 Eggs
- Sugar/ Brown sugar
- Milk
- 2 cups maida flour/ All purpose flour/ white flour.
- 1 spoon baking powder (optional)
That's it!
Without much ado, let's begin!
Step 1: Separate the yolks from egg whites in two separate bowls.
Step 2: In yolks mixture, add two cups flour, 4 spoons of sugar, 1 spoon baking powder. By gradually adding milk, mix that into a smooth batter.
Step 3: Take the egg whites bowl and whisk the eggs with electric whisker on low speed OR you can use normal hand whisker from above pictures but it just takes more time.
Step 4: Whisk for 20 seconds and after you get these bubbles, add 3 spoons of sugar and whisk for 4 minutes till you get this smooth consistency.
You are almost done.
Step 5: Now, transfer this egg whites mixture into the yolk and flour batter that was mixed before.
And gently fold it as shown below from top to bottom and mix gently. Don't over mix it!
Step 6: Batter is ready! now take a non stick pan and add a spoon of butter and and add the batter on pan with a cupped utensil. Then, close the lid and cook it for 30 seconds.
Step 7: Now, remove the lid and add two more spoons of batter on uncooked side and flip the cake.
Step 8: Close the lid and cook for 15 more seconds.
Voila! Your fluffy pancakes are ready!
I suggest you to serve them with some sugar caramel syrup or maple syrup/ honey and fruits!
