Rasmalai with left over milk!

Hi foodies! do you have some left over milk in your kitchen? Let's try some desserts out of it then!
First of all we shall make some cottage cheese ( paneer) out of it. Then we can make so many desserts and sweets from the indian cuisine!




You just need:

  • 2 cups of milk
  • lemon/ vinegar 
  • cheese cloth/ any cloth
  • brown sugar/ sugar
  • elaichi/ cardamom, (rosewater-optional)
  • kesar/ yellow food colour
PANEER/COTTAGE CHEESE
Procedure:

step 1: Boil the milk. When it reaches the boiling point, put it on simmer and add 1 spoon of vinegar or squeeze half cut lemon into the milk and mix it. 




step 2: The milk starts curdling. Drain out the water and place the paneer gently on cheese cloth and squeeze the excess water and moisture by running it through cold tap water. Hang the cloth for some hours or squeeze the moisture completely. 



step 3: Separate the paneer all from cloth and take it in a bowl. Knead the separated paneer crumbles  by pressing it and make it into a smooth dough form. Then make some balls out of it in the following way.





For just 2 cups, you might get some 6 to 7 balls. If you want more, you just add more milk while boiling.

RASGULLA & RASMALAI:

step 1: Boil 2 cups of water and add 1 cup of sugar ( check the taste if it's enough or add more) and add crushed elaichi.



step 2: Add the paneer balls into the sugar water and close the lid for 6 minutes on medium flame.


step 3: After they get doubled in size, take them out. Get it cooled down, Add more sugar in the same sugar water/ other batch and make thick sugar syrup. OR you can use same water. WE ARE HUNGRY ALREADY! 😂

step 4: After it gets cooled down, chill it in fridge and serve!


RASGULLA IS READY!

You can make rabri also if you still got some milk and make RASMALAI!

RASMALAI
Procedure:

Rabri:

step 1: Heat 2 cups of milk. Boil it and add the crushed elaichi/ cardamom and 1 cup sugar.


step 2: Put it on medium flame and keep sticking the cream which is forming on the top layer of milk to the sides of vessel until it gets reduced.


step 3: When the milk gets reduced, scrape the cream which was sticked to sides into the milk.
Mix some kesar into a cup of milk and add it into milk. (Add a pinch of turmeric or yellow food colour if necessary. Turmeric is healthy but add only a pinch otherwise its flavour gets kicked in and ruins the taste)

You can also add some drops of edible rose water if you want.

Then, add the sugar.






step 4: Mix it well untill it gets creamy/ thick and turn off the stove. Add the Paneer balls from sugar syrup into rabri. Cool it down and put it in fridge for an hour.



That's it! Serve it!
