Jalebi

- 3 cups maida flour ( All purpose flour)
- 2 spoons corn flour (Optional)
- 4 cups sugar
- 3 Cardamom ( Elaichi)
- Saffron/ Kesari (optional)
- 4 spoons curd.
- 1 spoon vinegar
- 1 lemon
- Oil to fry
Let's start this easy procedure!
Step 1: First, In a vessel, add the sugar and water and make the sugar syrup with thick consistency. Then add the kesari and elaichi and mix it. Turn off the stove, Squeeze 1 spoon lemon into it so that it won't crystalize and keep it aside.
Step 2: In maida flour, add the curd, vinegar, corn flour( You can sprinkle some orange food colour if you want or omit it) and mix the batter with water with the below consistency. Then, add 1 spoon baking soda and mix the batter. Pour the batter into a squeeze bottle.
Step 3: Heat the oil in a kadai and squeeze the batter into twirl shapes into the oil carefully as shown in the following way.
Step 4: Fry them till they get golden colour and hard. Don't overcook them or undercook. Take them off when they get hard and at right colour. Immediately transfer them hot into the sugar syrup. Dip them and coat them till they absorb the syrup for 3 minutes and remove and place them on plate/ bowl.
Step 5: Repeat till batter is completely squeezed from the bottle and serve your jalebis hot!
